Cherry Bomb Recipe - Vegan and Gluten-Free
This recipe is one of my go-tos. It's fun, easy, filling, tasty, healthy...the list goes on! I have a few different versions (I'll share another one later) and I love how easy it is to think of new flavors. We use cherry bombs for hikes, snacks, breakfast, and even pack them for lunch with a few other sides! They're high in protein and fiber, so they fill you up and give you energy, but they're also so sweet and fruity! The best part is that they take about 10 minutes - that's it! You can store them in an airtight container for about a week, so making a batch on the weekend means you'll have quick snacks all week. Score! Here's my simple recipe: Prep time 10 minutes. Cook time 0 minutes. Makes about 16 balls.
½ C raw almonds ½ C rolled oats ½ C dried cherries 10 pitted medjool dates
- In food processor, blend almonds and oats for about 20 seconds.
- Add dates and cherries and blend until dates have pureed into the mixture.
- Grab a chunk of the mixture, about 1/8 of a cup, and roll it between your hands to form a ball.
- Roll all the mixture, and enjoy right away! Or store in an airtight container for up to a week.
