Fruit Sweetened Pumpkin Pie

We love the holidays!  Almost for the sole purpose of making and eating this pie!! Ok, we actually really love the family gatherings, snowy scene, and warm fires. But if you're looking for a really easy and truly better-for-you holiday dessert look no further than our cinnamon-y, date-sweetened pumpkin pie.  You can pour this beautiful filling into any crust of your choice or eat it crust-free!  My favorite pie crust lately has been as follows:
  • 1/2 C gluten free flour
  • 1/2 C oat flour
  • 1/2 C almond meal
  • 6 Tbsp almond butter
  • 5 tsp cold water
  • 2 tsp date paste
Combine ingredients and press into a pie pan. And for the FILLING:
  • 3/4 C raw cashews
  • 1 can pumpkin puree
  • 1/3 C unsweetened plant milk
  • 1/2 C date paste
  • 1 Tbsp fresh squeezed lemon juice
  • 2 tsp cinnamon
  • pinch of salt
Add all filling ingredients to a high speed blender and blend until completely smooth.  Pour into your crust and bake at 350 degrees for about 35 minutes.  Let cool completely as this will help it to set.  Top with your favorite coconut cream or plant based yogurt and devour!
